Its slightly curved edge is ideal for rocking cuts. Kiritsuke is the only multipurpose traditional Japanese knife and in Japan only the executive chef in the kitchen is allowed to use one. Shun Classic knife blades are made with solid core of Shun's proprietary VG-MAX steel and feature a 16 degree cutting angle on each side.
