At the cost of corrosion and wear resistance, this steel can easily be brought up to extreme sharpness. The double-bevel blade features a black finish and is attached to a D-shape Japanese magnolia handle. The Kiritsuke is a unique Japanese Chef knife, suitable to the tasks of Western-style blades, though with different technique. Its straighter blade profile cuts with motions more like the Santoku and Gyuto. This means you get more cutting edge for its intended motion, making the knife comparable to rocking blades of greater length. Notes: 1) The white carbon steel is not stainless and requires some additional care. To prevent rusting, it should be kept dry; a light application of oil is helpful as needed, especially during the first uses. Eventually, the steel shall oxidize, creating a dark, protective patina. 2) These knives are not the typical 'boutique style' and have a rustic aesthetic that may not be suitable to all users. The coarse finish is normal and part of their handcrafted charm. Also, some of the black finish shall initially wear off; it is advised to clean the knife with a sponge before first use.
